Everything is better in Texas, including our food. This dish is great for holiday potlucks, served with whole grain tortilla chips, or as a colorful, high-fiber topping to your morning scrambled eggs. This dish makes eating your vegetables fun!
Ingredients
1 red bell pepper, diced
1 green bell pepper, diced
½ red onion, diced
2 jalapeño, deveined and diced
1 black beans, canned, no salt added
1 black-eyed peas, canned, no salt added (option to sub pinto beans)
1 corn, canned, no salt added
1c cherry tomatoes, diced
1 avocado medium, cubes
1 lime
1/2c Italian dressing
Salt and pepper to taste
Directions
1. Wash all produce
2. Diced all fresh vegetable ingredients, except lime and avocado
3. Drain canned beans and corn in colander, rinse with water, then add to serving bowl
4. Pour Italian dressing and squeeze juice from lime over the mixture
5. Gently mix all ingredients together
6. Chill in refrigerator
7. Just before serving, cube avocado and put on top of mixture
8. Serve with tortilla chips
