Shrimp Ceviche with Avocado

Ceviche is light, refreshing and naturally low in carbs. This recipe emphasizes fresh flavors by combining shrimp, avocado and a zesty lime marinade.

Spring Shrimp Ceviche with Avocado

Ingredients

  • 1 pound of cooked shrimp, peeled and deveined
  • 1 large avocado, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup of cucumber, diced
  • 1 cup of chopped cilantro
  • 1/2 cup of fresh lime juice
  • 1/4 cup of chopped jalapeños (adjust to your spice preference)
  • 1 tablespoon of olive oil
  • Salt and pepper to taste

Directions

  1. Combine all ingredients in a large bowl
  2. Toss gently to combine
  3. Cover and refrigerate for at least 30 minutes to allow the flavors to blend
  4. Serve chilled as an appetizer or light meal
