Spring Shrimp Ceviche with Avocado
Ingredients
- 1 pound of cooked shrimp, peeled and deveined
- 1 large avocado, diced
- 1/2 red onion, thinly sliced
- 1/2 cup of cucumber, diced
- 1 cup of chopped cilantro
- 1/2 cup of fresh lime juice
- 1/4 cup of chopped jalapeños (adjust to your spice preference)
- 1 tablespoon of olive oil
- Salt and pepper to taste
Directions
- Combine all ingredients in a large bowl
- Toss gently to combine
