Serving Size: 1/3 cup
Ingredients:
1 lemon
3 medium tomatoes
1 small onion
1 stalk parsley
1/3 stalk fresh mint
½ c couscous mixed with ½ cup water. Let it set for 15 minutes and then fluff with a fork.
3 Tbsp olive oil
May salt to your taste
Recipe Directions:
- Prepare the couscous.
- Take off the stems of the parsley and fresh mint and cut into small pieces.
- Put the parsley and mint into large bowl.
- Cut onion into small pieces and then dice the tomatoes. Place these 2 ingredients into same bowl with mint and parsley. After 15 min, when couscous is ready, put couscous in the large bowl.
- Squeeze the juice of a whole lemon and spread it over everything. Then add the oil. Mix with a fork.
